Yerba mate recipes: yerba mate ice cream
Boil 3 cups of milk with three tablespoons of yerba mate.
Strain using a fine cloth
or sieve. Beat the egg yolks with sugar (mixer
or blender), mix slowly with the yerba mate/milk mixture. Simmer and
remove from the heat before it boils.
Allow to cool. Add the cream and stir or whisk. Place in
container and then in the refrigerator. Stir every so often to prevent the cream from crystallizing.
Important: it is useful to use a container with a lid, so you can mix it easily. Serve with caramel meringue.
